Dilled Cabbage Soup
This is a full bodied, healthy winter soup with a wonderful sweet and sour flavor.

| 1/2 | medium | cabbage -- chopped |
| 2 | large | onions -- chopped |
| 1 | teaspoon | dill seed |
| 1/2 | teaspoon | caraway seed |
| 1 | tablespoon | olive oil |
| 4 | cloves | garlic |
| 1 | tablespoon | vinegar |
| 3 | cups | vegetable stock |
| 1 1/2 | cups | tomato juice |
| 1 | large | potato -- diced |
| 2 | teaspoons | soy sauce |
| 1/4 | cup | parsley -- minced |
Heat the oil in a 3 quart saucepan and saute the cabbage,onions, dill, and caraway, stirring occasionally, until the cabbage is translucent and wilted, about 10 minutes.
Add the garlic and vinegar. Cook one minute. Add the stock, tomato juice, potatoes, and soy sauce. Cover and simmer until the potatoes are tender, about 15 to 20 minutes. Add the parsley.
