Dilled Cabbage Soup

This is a full bodied, healthy winter soup with a wonderful sweet and sour flavor.

1/2 medium cabbage -- chopped
2 large onions -- chopped
1 teaspoon dill seed
1/2 teaspoon caraway seed
1 tablespoon     olive oil
4 cloves garlic
1 tablespoon vinegar
3 cups vegetable stock
1 1/2      cups tomato juice
1 large potato -- diced
2 teaspoons soy sauce
1/4 cup parsley -- minced

Heat the oil in a 3 quart saucepan and saute the cabbage,onions, dill, and caraway, stirring occasionally, until the cabbage is translucent and wilted, about 10 minutes.

Add the garlic and vinegar. Cook one minute. Add the stock, tomato juice, potatoes, and soy sauce.  Cover and simmer until the potatoes are tender, about 15 to 20 minutes. Add the parsley.
