Meatless Shepherd's Pie

This is a wonderful meatless version of the standard Shepherd's Pie.

2 pounds potatoes
3 tablespoons          olive oil
    salt and pepper
1 large onion -- chopped
1   green pepper -- chopped
2   carrots -- grated
2 cloves garlic
3 tablespoons butter
4 ounces mushrooms -- chopped
2 14 oz cans adzuki beans -- drained
1 pint stock
1   bay leaf
1 teaspoon mixed herbs
    chopped walnuts

Boil the potatoes in the skins until tender. Peel, mash and mix with the olive oil. Salt and pepper to taste.

Saute the onion, pepper, carrots and garlic in butter until soft.

Stir in the mushrooms and adzuki and cook two more minutes. Add stock, bay leaves and herbs and simmer fifteen minutes.

Remove bay leaf and pour ingredients into a baking dish. Cover with the mashed potatoes and sprinkle with nuts. Broil until golden brown.
